Berry-Matcha Yogurt Bites

ingredients

  • 1 pint fresh raspberries (or any berry), rinsed and patted dry
  • 2 cups non-fat plain Greek yogurt
  • 2 teaspoons matcha powder
  • 2 tablespoons maple syrup
  • 1 cup white (or dark) chocolate chips
  • 1/2 cup sliced almonds (or any crushed nuts)

Instructions

  1. In a bowl, mix yogurt, matcha, and maple syrup until thoroughly combined
  2. Gently fold berries into yogurt and mix until evenly distributed. Using a 1/4 cup measuring cup, spoon yogurt and berries into 8 individual servings on a parchment-lined baking sheet. Place in the freezer for 30 minutes.
  3. When the yogurt and berries are frozen, in a microwave safe bowl, melt chocolate chips in the microwave, starting with 45 seconds, stir and continue in 20 second intervals until fully melted.
  4. Allow to cool slightly and evenly spoon over the berry-yogurt clusters, and top with nuts. Place back in the freezer for another 30 minutes. Enjoy!
